MMMMM, my mom makes the best carrot cake ever using apple sauce instead of butter (well, usually half and half, but if you're vegan you might want to do all applesauce). Of course, the frosting is cream cheese so all the fat/calories saved on using applesauce become irrelevant, but it's damn good.

Holland & Barrett do one (the brand is 'Just Wholefoods'). There are at least 3 different flavours - strawberry, raspberry, and another one I can't remember.

You can buy gelatine free jelly from most veggie/vegan shops, but I found that it never quite sets properly.
