Please excuse my ignorance but what is a CZ server ?
I know its a online game but which one? Is it something to do with Half Life or similar?

CZ = Condition Zero, a new version of CS based on HL2's inner workings iirc.

Condition Zero is a version of Counter-Strike using the same engine as the original (i.e., not the Source system used for HL2). It has single-player, and not much more, apart from a few new skins for maps.
