...is the temperature I've been working to for a well-baked loaf of bread. These days. It's grim up north.

Must confess that I haven't read all of the whole of every one of these august pages during the last few years but I'm assuming someone's already pointed out the relevance of this temperature.

H, it's a bugger.

We have it harder here in God's Own Country (which is due west of The People's Republic, where we have by far the best football team, as :von: is only too pleased to acknowledge) where the usual February temperature is 27-39F.

No good for bread making. Some might say. Unless they're on tour.

Proper bread needs to attain a delicious 94C all round and throughout, or it'll never do.
