It is possible to convert iTunes music store stuff into "normal" mp3s, but it's probably a method to horrify audio-nuts:
- Buy your track(s)
- Burn them onto an audio CD
- Delete the downloads
- Rip them from your burned CD as mp3s

Clever stuff
I just buy hard copies or download without buying (if it ain't that good), makes life a whole lot easier
